Wood smoked ribs

Well, the grilling season is here and I want to share one of MY FAVORITES with you. Also, pick up a few grilling ideas!

Anyway, start with a nice rack of pork ribs, then peal off the membrain on the back side (this is a must). Season both sides with Cavanders Greek spice and garlic powder. Be liberal with the Cavavnders and rub the spices into the meat. Using a charcoal grill, light about 12- 14 pieces of charcoal. After they're ready, set them in a ring to the outer edges of the grill. Set the ribs in the center of the grill and open the vent on the top. Soak hickory chips in water for about 15 min. and wrap a small handful in tin foil ( pre make 4 of these). Poke holes in the tin foil so they can smoke. Add one pack on top of hot charcoal evey 30 minutes or so. Turn ribs as necessary. The ribs will take aprox. 3-4 hours to cook so you have to add charcoal as necessary.

Eat em' plain like I do, or add BBQ sauce...
