These "10 kids show up" games? Which ones? Seems to me all the coaches have a couple players that can fill in if they are short. I have seen teams go with 16 skaters instead of a full 18, but for the most part they run four full lines and six D. (Shattuck being an exception. They do not call up from their other teams and do occasionally go lean by comparison.
